Thanks for all that MLCMM, I hope you don't mind the continued cross examination. I can completely see that refined carbs are a problem, e.g. refined flour and sugar. But I keep seeing this phrase "our diets have become very carb-heavy". Surely our diets have always been carb-heavy? (Complete guesswork on my part, admittedly.) So is it really carbs that are bad, or just refined carbs? Bottom line I guess is that I find it very hard to believe that potatoes and apples are bad for me.
