pasta sauce
All this talk of pasta parties started me thinking about food again. Pasta must be one of the mainstays of running fodder; and a tomato sauce is one of the best and easiest to make.
So here's my recipe.

Give the bottom of your saucepan a liberal coating of olive oil.
Fry 4 cloves of crushed garlic and a pinch of chilli flakes gently until the garlic begins to turn slightly brown.
Add a tin of plum tomatoes and mash them awhile until smooth-ish.
Add salt and pepper, a tsp of sugar, juice from 1/2 a lemon.
Simmer and reduce.

I'll generally make a big pot of this at the weekend, reducing it for 3-4 hours on top of a stove.
Then freeze it and use it for pasta, pizzas or have it with mussels.
But you can simmer it for 20-30 minutes and it's ready to eat.
I'll also add anchovies and black olives.
